What You Will Need

  • 2 Abalone
  • 1/2 Chicken
  • 3 Mushroom (cut half)
  • 3 Garlic (cut half)
  • 3 Shallots (cut half)
  • 2 Sliced Ginger
  • 6 Scallions
  • 6 Dried Chillies
  • Lee Kum Kee Sauce for Black Bean Chicken

How to make it

 

  1. Heat pan with a little oil, add chicken pieces and lightly sear.

  2. Add ginger slices, garlic, shallots, dried chilies and shiitake mushrooms, stir-fry until fragrant. (Tip: Add spring onion sections at the end to avoid burning.)

  3. Add abalone, 2/3 pack of Sauce for Black Bean Chicken and about 60ml water. Stir quickly until the sauce coats all ingredients.

  4. Bring to a boil over high heat, then reduce to low heat, cover and simmer for 15–18 minutes until chicken is tender, abalone is flavorful and sauce thickens. (Tip: Taste midway and adjust with water or sauce to your preference.)

  5. Before serving, sprinkle with spring onion sections for aroma. Ready to serve!
